Ingredients
- 100g fine rice noodles
- 1 spring onion, roughly chopped
- 1 carrot peeled in strips
- 1/2 cup chopped cucumber
- ½ cup red pepper sliced
- 2 cups spinach
- 80g Liberty’s smoked salmon, cut into small chunks/pieces
- 1 tbsp crushed cashew nuts
- 2 tbsp balsamic dressing
Method
- Cook noodles following packet instructions and set aside
- Combine the spring onion, carrot, cucumber, red pepper and spinach in a large bowl with the balsamic dressing
- Add in the cooked rice noodles and stir through
- Sprinkle the smoked salmon and cashew nuts on the top
- Sit down and enjoy!
