Liberty’s Smoked Salmon Noodle Salad

A healthy quick and easy dish which is ready within minutes and tastes delicious!


  • 100g fine rice noodles
  • 1 spring onion, roughly chopped
  • 1 carrot peeled in strips
  • 1/2 cup chopped cucumber
  • ½ cup red pepper sliced
  • 2 cups spinach
  • 80g Liberty’s smoked salmon, cut into small chunks/pieces
  • 1 tbsp crushed cashew nuts
  • 2 tbsp balsamic dressing


  1. Cook noodles following packet instructions and set aside
  2. Combine the spring onion, carrot, cucumber, red pepper and spinach in a large bowl with the balsamic dressing
  3. Add in the cooked rice noodles and stir through
  4. Sprinkle the smoked salmon and cashew nuts on the top
  5. Sit down and enjoy!
